Hazard Analysis and Critical Control Point System (HACCP)
Hazard Analysis and Critical Control Points (HACCP) is a systematic preventive process to guarantee food safety, in a logical and objective way. It is applicable in the food industry and in all types of industries that manufacture materials in contact with food. It identifies, evaluates and prevents all risks of contamination of products at physical, chemical and biological levels throughout all the processes of the supply chain, establishing preventive and corrective measures for their control in order to ensure food safety. HACCP aims to develop systems that provide a high level of assurance of food safety.
ISO 22.000:2005
ISO 22000 is the international standard for food safety management systems for the entire supply chain, from farmers and ranchers to processors and packaging, transport and point of sale. ISO 22000 specifies the requirements for a food safety management system involving interactive communication, system management, and prerequisite programmes (PPR). The standard focuses on securing the supply chain, has integrated management system principles and is aligned with the HACCP principles of the Codex Alimentarius.
